Rice is one side dish that is often associated with Mexican food. At home, I serve 3 different rice dishes, depending on the main dish. I make a white rice with corn, cilantro lime rice and a "Mexican" red rice. Today, I'm sharing my tried and true "Mexican" Red Rice. I serve this with many of my homemade Mexican dishes, including Enchiladas, Caldo de Res, Albondigas and Carne Guisada. The secret to an authentic rice recipe is the toasting of the rice adding water. "Mexican" Red RiceIngredients: 1 Tbsp avocado oil 1 C medium grain white rice 3-4 garlic cloves, minced 1/4 sweet onion, chopped 1 Tbsp Knorr tomato bouillon 2 C hot water In a medium sauce pan over med-low heat, saute rice, garlic, onion, and bouillon in avocado oil until the rice is slightly toasted and golden. Add hot water to toasted rice. Stir, bring to a boil, then lower heat to low and simmer covered for 20 minutes. Fluff with a fork.
